VEGAN BANANA BREAD
The lockdown staple, reimagined!

INGREDIENTS:

240g plain flour
-
200g granulated sugar
-
1tsp baking soda
-
1/2 tsp salt
-
1tsp cinnamon
-
3 medium-ripe bananas
-
115g vegan butter/margarine (melted)
-
1tsp vanilla
-
180g dark chocolate chips
SERVINGS: 10 servings
PREP TIME: 15 mins
COOKING TIME: 55 mins

Method:

Preheat the oven to 180°C

Lightly grease a 9x5x3-inch loaf pan and line with parchment

In a bowl, mix the flour, baking soda, salt and cinnamon
-
In a separate bowl, mash the bananas very well
-
Add the melted butter and vanilla to the mashed bananas
-
Combine the wet and dry ingredients
-
Stir in the chocolate chips
-
Pour the batter into the pan
-
Bake for 55 minutes or until golden brown
