VEGAN BANANA BREAD

The lockdown staple, reimagined!

INGREDIENTS:

  • 240g plain flour

  • 200g granulated sugar

  • 1tsp baking soda

  • 1/2 tsp salt

  • 1tsp cinnamon

  • 3 medium-ripe bananas 

  • 115g vegan butter/margarine (melted)

  • 1tsp vanilla

  • 180g dark chocolate chips

 

SERVINGS: 10 servings

PREP TIME: 15 mins

COOKING TIME: 55 mins

Method:

  1. Preheat the oven to 180°C

  2. Lightly grease a 9x5x3-inch loaf pan and line with parchment

  3. In a bowl, mix the flour, baking soda, salt and cinnamon

  4. In a separate bowl, mash the bananas very well

  5. Add the melted butter and vanilla to the mashed bananas

  6. Combine the wet and dry ingredients

  7. Stir in the chocolate chips

  8. Pour the batter into the pan

  9. Bake for 55 minutes or until golden brown
